In 1898, New York Biscuit Company merged with another company, the American Biscuit Company, which had been formed when 40 Midwestern bakeries merged. In 1889, the company merged with seven others to become New York Biscuit Company. The Biscuit Works are now a part of a much much bigger company. His inventions are likely what made the Kennedy Biscuit Works endure to today, though under a different name. Mitchell invented many other cookie machines that could make dough sheets, wafers and more. It also eliminated the presence of any seam at all in the cookie itself. The larger funnel would extrude a cookie dough while the smaller one would extrude a jam filling inside of that same dough, thus eliminating the rolling and filling step home bakers used. Mitchell's machine combined two varying sized funnel shaped extruders. Inventor James Henry Mitchell, of Florida, simplified the process using a new machine of his own design. Under Kennedy Biscuit Works, the process of creating Fig Newtons got an overhaul. They named Fig Newtons after Newton, Massachusetts. While legend often says they borrowed the name from physicist Isaac Newton, the company would often habitually name their cookies after small towns, including Beacon Hill, Harvard and Shrewsbury. When they bought the recipe, the company needed a name for it. The owners began selling their flaky, homemade biscuits at the farmer’s market before eventually growing to need multiple locations.Roser sold his recipe to the Kennedy Biscuit Works of Boston. I was surprised (but elated) to see Sweet Tea on the menu, and it all makes sense now knowing this restaurant was started by a trio of Southerners from North Carolina. Her son chose the Blueberry Cornmeal Pancakes: “Big triple stack made from scratch with local blueberries, served with butter & real maple syrup.” They were of generous size, for sure! Can also add your choice of chopped country ham, smoked brisket, chopped fried chicken, sausage, or bacon.” She added ham and collard greens. My friend opted for the Hash Ups: “Golden hash browns with grilled onions, mushrooms and melted cheese. This BBQ Biscuit from Pine State Biscuits delivered! I ate every crumb, along with a plate of cajun fries. Which is a gamble because I’m particular about my BBQ (not too smoky, not too fatty) and I want a spicy, tangy sauce. I usually go for a biscuit with spicy fried chicken or even savory sausage gravy, but I couldn’t resist the pulled pork. I opted for the BBQ Biscuit: “Reverends pulled pork with Carolina style bbq sauce topped with house slaw.” (I asked for my slaw on the side.) (When we left, a line was starting to form and people were waiting for our seats.) There isn’t much seating inside- a mix of high top community tables and a few regular, but we were able to snag a table for the three of us. We visited the location on Shuyler St and at 8am they weren’t too busy. Luckily, there was a location close to my AirBNB so I met my friend, Alisa, there for breakfast Saturday morning after my conference. When I asked around for the best biscuit in PDX, Pine State Biscuits was the #1 recommendation.
